ServSafe Manager practice test: 90 questions
The real exam is about 90 multiple-choice questions with a two-hour limit and a 75% pass mark. This mock is built to the same shape: 90 questions, a hard 90-minute clock, weighted to the 7-domain blueprint, and scored per task so that when you finish you know the two things to fix rather than a single number.
What you are actually sitting down for
- Questions
- 90, multiple choice
- Time limit
- 90 minutes (deliberately tighter than the real two hours)
- Pass mark
- 75% — train for 85%
- Question mix
- Weighted to the 7-domain blueprint
- Feedback
- Score per domain and per task, plus every missed item
How the 90 questions are distributed
The mock mirrors the emphasis of the published blueprint, so the clock pressure lands where the exam puts it. That is why Time & Temperature gets three times the questions of Facilities & Equipment.
| Domain | What it asks | Questions |
|---|---|---|
| Time & Temperature | Cooking and holding temperatures, cooling curves, thawing, thermometer checks | 18 |
| Cross-Contamination | Storage order, the Big Eight allergens, separating equipment and tasks | 14 |
| Food Safety Management | HACCP, active managerial control, corrective action, recalls | 13 |
| The Safe Food Handler | Handwashing, reporting illness, glove use, personal habits | 13 |
| Providing Safe Food | Contamination, pathogens and what they need, TCS food, advisories | 12 |
| Cleaning & Sanitizing | Warewashing, sanitiser concentration, cleaning schedules | 10 |
| Facilities & Equipment | Potable water and backflow, surfaces, ventilation, pest control | 10 |
ServSafe sets and occasionally revises the real cut score and question count — confirm the current figures with your training provider before booking.
The 21 tasks those questions come from
Every question in the mock is tagged to one of these, which is what makes the post-test breakdown actionable rather than decorative.
| Domain | Its three tasks |
|---|---|
| Time & Temperature | Cooking & Holding · Cooling & Thawing · Checks & Records |
| Cross-Contamination | Receiving & Storage · Allergens · Utensils & Surfaces |
| Food Safety Management | HACCP & Systems · Managerial Control · Recalls & Oversight |
| The Safe Food Handler | Handwashing · Health & Illness · Gloves & Habits |
| Providing Safe Food | Contaminants · Pathogens & Growth · TCS & Risk |
| Cleaning & Sanitizing | Warewashing · Chemicals · Schedules & Surfaces |
| Facilities & Equipment | Water & Plumbing · Surfaces & Equipment · Pest Control |
How to use it properly
- Do not take it cold. A 90-question mock taken in week one tells you that you do not know anything yet, which you already knew. Spend a week on individual tasks first.
- Take it in one sitting, no pauses, no notes. The only thing the clock is training is your ability to answer without second-guessing.
- Read the breakdown, not the percentage. The useful output is the two tasks sitting under 60%. Those are the ones that decide the exam.
- Drill those two tasks, then retake the mock in three days. Two mock runs with real work in between is worth more than five mock runs back to back.
Questions people ask
Is this the same as the real exam?
Same shape, same pass mark, same domain weighting — different questions. Nobody legitimately sells the real items (the pool is copyrighted and rotated), so this mock is written from the public FDA Food Code and the published blueprint, with the rule cited on every explanation.
What score should I be getting before I book the exam?
85% or better, twice in a row, on different sets. The pass mark is 75%, but a mock you pass at 76% is a coin toss on exam day.
Why 90 minutes instead of the real two hours?
Because pace is the thing most people get wrong. Finish the mock with ten minutes in hand and the real exam's two hours will feel generous rather than tight.
Can I review the questions I missed?
Yes — the result screen lists every miss, and one click rebuilds a drill containing only those questions.
