ServSafe Manager · the format
How many questions are on the ServSafe test?
About 90 multiple-choice questions, a two-hour time limit, and 75% correct to pass. The certificate you get for passing is valid for five years. That is the whole format — everything else people worry about is really a question about what those 90 items ask.

How many can you miss?
At a 75% pass mark across 90 questions, the line lands at roughly 68 correct — so you can miss about 22. Two cautions about that number:
- The cut score is set by ServSafe, not by arithmetic, and it has changed between exam versions. Treat 68 as the shape of the line, not a guarantee.
- Training to 68 is how people fail at 66. In practice aim for 85%, so a bad night's sleep or one badly worded question cannot push you under.
How long do you get per question?
Two hours across about 90 questions is 80 seconds each, and most candidates finish with 30–45 minutes to spare. That tells you something useful about how to prepare: this is not a speed exam, it is a recall exam. You do not need to think faster, you need the numbers to already be there.
The only questions that reliably eat time are the temperature ones, because four plausible numbers (135, 145, 155, 165) appear side by side and the wrong one always looks familiar.
What the 90 questions actually test
Every item comes from the same seven domains, and the marks are not spread evenly. Three kinds of knowledge are being examined:
| What it tests | Typical question | Where it lives |
|---|---|---|
| Numbers you must recall cold | Minimum internal temperature for ground meat; final rinse in a heat-sanitising dish machine | Time & Temperature, Cleaning & Sanitizing |
| Rules and sequences | Storage order in the walk-in; the four approved thawing methods; when a consumer advisory is required | Cross-Contamination, Providing Safe Food |
| Managerial judgement | Which step of active managerial control a situation describes; what to do with recalled stock | Food Safety Management |
The judgement questions feel hardest because they have no number to memorise, but they are the most predictable: they almost always ask you to name the step in the control loop (identify the risk, monitor, correct, re-evaluate) or to choose the safest option.

What is the minimum water temperature at a handwashing sink?
- 70°F (21°C)
- 85°F (29°C)
- 100°F (38°C) — correct

100°F (38°C). Warm enough to lift grease, cool enough that nobody avoids washing their hands. Water at every fixture must also be potable. FDA Food Code 5-202.12
Questions people ask
Is the ServSafe test the same in every state?
The exam is the same nationally. What varies is which certification your local health department accepts and how often it must be renewed — so check your state's requirement before you book, not after.
Is this the same as the Food Handler card?
No. The Food Handler assessment is a shorter, non-proctored course aimed at everyone who handles food. The Manager certification is a proctored exam and is what most states require the person in charge to hold. If you are taking the Food Handler one, check the current format on servsafe.com — it is not the exam this site trains you for.
How many questions do I need to get right on a practice test before booking?
85% or better, twice in a row, on two different sets. Below that you are gambling on the cut score.
