How long is the ServSafe test?
Plan for a two-hour session and roughly 90 multiple-choice questions. Most candidates finish in about 75 to 90 minutes, so the clock rarely decides the outcome — the content does. What actually consumes your day is the appointment, the check-in, and the proctoring overhead around the exam itself.

Administration details differ by provider and by state program, and some administer a 90-minute version. Confirm the clock and format with the provider you book with, not with a blog post.
How the two hours actually breaks down
Ninety questions in 120 minutes is 80 seconds per question. That is generous for factual recall and tight only if you read every scenario twice. The candidates who run out of time almost always share one habit: they re-read a question they have already answered instead of moving on.
- Answer every question. There is no penalty for a wrong answer, and a blank is scored as wrong.
- Flag and move. If a question takes more than about 90 seconds, flag it and come back. Do not let one scenario cost you four questions.
- Budget the last 20 minutes for the flagged set, not for a full review pass.
- Do not chase perfection. You need 70% of the 80 scored items — 56 correct. You are allowed to miss 24.
Why people say the exam feels long
The Manager exam is not long because of its clock; it is long because of its vocabulary. Scenario questions dress a single Food Code rule in a paragraph of restaurant detail, so a candidate who knows the rule still has to spend 20 seconds finding it. Practising with the same shape — timed, scenario-based, per-domain — is what removes that overhead.

A mock you never time is a quiz. Run at least one full 90-item set with a clock running, so the pace is one less variable on the day that counts.
